Should not do - it can slow the first request down if the local dns cache does not have the info in it but you could try adding then IPs into the host file as a trial.I have each AP configured for the same SSID. Each device (APs, RPi, control server etc.) also has a static IP, so I don't think DHCP is a problem. The network is also dedicated to this system, so no heavy traffic should be going through the APs. I need to use mDNS for other reasons though, would it have a big impact?
I wonder if the Pi is having issues deciding the most powerful signal and is 'ping ponging' between two APs? Possibly increasing the distance between them may help or give separate SSIDs.
Only other things I can think off is to drop the security on the Wi-Fi (NOT A GOOD IDEA) to the bare minimum, turn off any band steering (802.11k/v) while setting the frequencies allowable on the Pi and make sure any power save settings on the AP are off.
After these I think it may be a wireshark task to see if there are any errors or delays in packets.
