-Testing Cables and Router Ports: I’ve tried multiple Ethernet cables that I know work with other devices and multiple ports on my TP-Link AX1800 router. None of these have resolved the issue.

A good start, but not enough to guarantee interworking with an RPi 4/5 network interface.

That demands a utp cable in which all 4 cable pairs are correctly connected.

Some utp cables have only 2 pairs wired, and some network interfaces on other devices are fine with that at restricted throughput.

(But that doesn't explain why it stopped working. Unless you changed cables to an incompatible one.)

How is your RPi4B/2 being powered?
I have it powered via the official Raspberry Pi USB C 5.1V 3A cable. Trying a couple different ethernet cables doesn't seem to have an effect, I might order a new utp cable with all 4 cable pairs connected to rule out the ethernet cable.
