I was under the impression that the combination of the higher gauge wiring and using the 27W power supply would provide sufficient voltage and amperage, but because the extension cable is "dumb" (i.e. it doesn't communicate with the board), the change to the eeprompt would be needed to "lie" to the RPi essentially convincing it that 5 amps are in fact available. I guess I'm surprised that a few feet of 100W rated cable would lead to such a voltage drop. Which is why I posted here thinking it might be something fixed in the config. As for running an extension cord to my desk rather than extending the usb-c portion of the power supply, it's just aesthetics. I'd rather not have a big cube and chunky extension cord cluttering my desk space. I suspect this might be an issue for others too.
